Chicken Thighs Undercooked

  • chicken thighs
  • oven
  • foil
  • thermometer
  • butter

Why it happened

Dark meat needs a higher internal temperature for tenderness. Gentle oven heat finishes cooking without drying the outside.

The fix

  1. 1 cover with foil and bake at 325F for 10 minutes
  2. 2 check for 175F near the bone
  3. 3 rest 5 minutes before serving

If it's still wrong

  • slice and simmer in a sauce until tender
  • shred for tacos or bowls

Prevent next time

  • use a thermometer and target 175F
  • sear first, then finish at lower heat
