Chicken Thighs Greasy

Your chicken thighs feel oily because the fat did not render fully. Crisping and draining will fix the texture.

Ingredients on hand

  • cooked chicken thighs
  • paper towels
  • skillet
  • lemon
  • herbs

Why it happened

Thighs contain a lot of fat. If the heat is too low, the fat stays in the skin and makes it feel greasy.

The fix

  1. 1 sear skin-side down in a dry skillet for 3 minutes to render fat
  2. 2 drain on paper towels to remove excess grease
  3. 3 finish with lemon juice and herbs for balance

If it's still wrong

  • Remove the skin and crisp it separately for garnish.
  • Chop and toss into a salad with a sharp dressing.

Prevent next time

  • Start thighs skin-side down in a cold pan to render slowly.
  • Finish at higher heat to crisp the skin.

Why this works

Rendering fat requires time and contact with heat. Searing skin-side down melts and drains the fat, leaving the meat less oily and more crisp.
