Chicken Thighs Greasy

Ingredients on hand
- cooked chicken thighs
- paper towels
- skillet
- lemon
- herbs
Why it happened
Thighs contain a lot of fat. If the heat is too low, the fat stays in the skin and makes it feel greasy.
The fix
- 1 sear skin-side down in a dry skillet for 3 minutes to render fat
- 2 drain on paper towels to remove excess grease
- 3 finish with lemon juice and herbs for balance
If it's still wrong
- Remove the skin and crisp it separately for garnish.
- Chop and toss into a salad with a sharp dressing.
Prevent next time
- Start thighs skin-side down in a cold pan to render slowly.
- Finish at higher heat to crisp the skin.

Why this works
Rendering fat requires time and contact with heat. Searing skin-side down melts and drains the fat, leaving the meat less oily and more crisp.
