Celery Root Grainy
Grainy celeriac purée means it wasn't cooked through or wasn't processed hot enough — here's how to turn it into a silky, restaurant-quality purée.

Ingredients on hand
- celeriac (celery root)
- butter
- heavy cream or milk
- lemon juice
- salt
- white pepper
Why it happened
Celeriac contains more cellulose fiber than potato, making it resistant to smooth pureeing unless thoroughly cooked. Grain in a purée means cell walls haven't fully ruptured — either from undercooking or from processing cold or warm instead of very hot. Cold butter added too quickly also cools the purée below the temperature where remaining cell fragments can be emulsified.
The fix
- 1 Return the celeriac to simmering salted water and cook for an additional 10 minutes — it must be completely tender with zero resistance when pierced
- 2 Drain thoroughly and return to the warm pot over low heat for 2 minutes to steam off excess moisture
- 3 Pass through a ricer or fine food mill while still very hot — the cell walls are most easily ruptured at high temperature
- 4 Beat in warm (not cold) butter and cream over low heat, tasting for salt and lemon
If it's still wrong
- Blend with a high-powered blender (not a hand mixer) while still hot — a blender ruptures cell walls more thoroughly than a masher or ricer, creating a completely smooth result.
- Strain the purée through a fine-mesh sieve, pressing with a spatula — this catches any remaining fibrous particles and produces a perfectly smooth, glossy result.
Prevent next time
- Cook celeriac until it's past the point where a knife slides in — it should fall apart when pressed.
- Work through a ricer or food mill while steaming hot; purée that cools before processing always has more texture.
Substitutions
- heavy cream → crème fraîche for a tangy, richer version
- butter → good olive oil for a dairy-free purée (will be less silky)
