Cake Stuck to Pan

Your cake is glued to the pan because sugar caramelized on the edges or the pan was not greased well. Gentle heat and steam will release it.

Ingredients on hand

  • stuck cake
  • thin knife or offset spatula
  • warm towel
  • butter
  • parchment

Why it happened

As cakes cool, sugars on the pan edge harden like glue. A little steam from a warm towel softens that crust so the cake releases without tearing.

The fix

Save
  1. 1 run a thin knife around the edge and gently loosen the sides
  2. 2 set the pan on a warm, damp towel for 2 minutes to soften the sugar crust
  3. 3 invert onto parchment, then flip right-side up and cover with glaze or frosting

If it's still wrong

  • Patch gaps with frosting and decorate with crumbs or sprinkles.
  • Cut into squares and serve as a trifle layer.

Prevent next time

  • Grease and line the pan with parchment rounds.
  • Let the cake cool 10 minutes, then unmold while still warm.

Why this works

Steam softens the caramelized sugar that bonds a cake to the pan. Once the sugar loosens, the cake can slide out with minimal tearing, and any small damage can be masked with frosting.
