Burgers Shrinking

  • burger patties
  • skillet
  • water
  • cheese
  • butter

Why it happened

Overworking aligns proteins and causes more shrinkage. Steam and added fat improve the texture after the fact.

The fix

  1. 1 press a shallow dimple in the center and reheat with a splash of water
  2. 2 cover for 1 minute to steam and soften
  3. 3 melt cheese on top for moisture

If it's still wrong

  • slice and use in a burger bowl
  • chop into a cheesy hash

Prevent next time

  • handle the meat gently and avoid overmixing
  • make patties wider than the bun
