Why it happened
Overworking aligns proteins and causes more shrinkage. Steam and added fat improve the texture after the fact.
The fix
- 1 press a shallow dimple in the center and reheat with a splash of water
- 2 cover for 1 minute to steam and soften
- 3 melt cheese on top for moisture

- slice and use in a burger bowl
