Brussels Sprouts Burnt

Ingredients on hand

  • burnt Brussels sprouts
  • knife
  • olive oil
  • lemon juice
  • oven

Why it happened

Burnt leaves taste bitter. Removing them and re-roasting at a lower temperature rescues the remaining sprouts.

The fix

  1. 1 trim off the darkest leaves and discard
  2. 2 toss with olive oil and lemon juice
  3. 3 roast at 400F for 4 minutes to finish

If it's still wrong

  • shred and saute with bacon or nuts
  • blend into a creamy soup

Prevent next time

  • use a lower temperature and more space
  • cut sprouts evenly

Why this works
