Brussels Sprouts Burnt

Ingredients on hand
- burnt Brussels sprouts
- knife
- olive oil
- lemon juice

Why it happened
Burnt leaves taste bitter. Removing them and re-roasting at a lower temperature rescues the remaining sprouts.
The fix
- 1 trim off the darkest leaves and discard
- 2 toss with olive oil and lemon juice
- 3 roast at 400F for 4 minutes to finish
If it's still wrong
- shred and saute with bacon or nuts
- blend into a creamy soup
Prevent next time
- use a lower temperature and more space
- cut sprouts evenly
