Why it happened
Blandness is almost always a missing element rather than a missing ingredient. Salt amplifies existing flavors by suppressing bitterness and enhancing sweetness. Acid adds contrast and brightness that makes the palate notice flavors it was ignoring. Fat carries and prolongs flavor on the tongue. Together, these three adjustments transform a flat dish into a balanced one.
The fix
- 1 Add 1/4 teaspoon salt, stir, and taste -- repeat until flavors sharpen (usually 1 to 2 additions)
- 2 Add 1 teaspoon lemon juice or vinegar and taste -- the dish should suddenly "pop" with brightness
- 3 Finish with 1 teaspoon butter or olive oil stirred in, plus a tablespoon of fresh chopped herbs
If it's still wrong
- Stir in 1 teaspoon soy sauce or fish sauce for instant umami depth.
- Add 1 teaspoon tomato paste or a pinch of MSG and simmer 2 minutes.
Prevent next time
- Season at every stage of cooking, not just at the end.
