Biscotti Too Hard

Why it happened

Biscotti dry out during the second bake. A little moisture and gentle heat make the crumb less brittle.

The fix

  1. 1 brush lightly with milk and wrap in foil
  2. 2 warm at 275F for 6 minutes to soften
  3. 3 serve for dunking in coffee or tea

If it's still wrong

  • crush into a dessert topping
  • dip in melted chocolate for a softer bite

Prevent next time

  • shorten the second bake by a few minutes
  • cool fully before judging crispness
