Why it happened
Burnt sugars turn bitter. Removing the char and adding a light glaze balances the flavor.
The fix
- 1 trim the darkest edges and discard
- 2 brush with a tiny bit of brown sugar and pepper
- 3 warm in a skillet for 30 seconds to re-crisp

- chop and use as a topping for salads

- cook over medium or bake at 375F
- start bacon in a cold pan
